Based on the every day moong dal from Madhur Jaffrey's 'At Home' book.

Recipe Ingredients for Basic moong dal

1 cup Moong Dal
1 1/2 tbsp olive oil
1/2 cup chopped onion
3 1/2 cups water
1 tsp Cumin Seed
1/2 tsp ground turmeric
1 Peppers, Hot Chile, Sun-dried
1/2 tsp kosher salt

Recipe Directions for Basic moong dal

  1. Rinse the moong dal, then add the water.

  2. Bring to a boil, skim off the white foam, then add the turmeric.

  3. Reduce to a simmer then allow to cook for 45 minutes.

  4. Before serving, warm the olive oil in a small frying pan until hot. Add the cumin, chile, and finely chopped onion and cook quickly until the onion begins to brown and the spices are fragrant.

  5. Pour oil and spice mix onto the dal, stir in, then serve.
