Basic Hummus made from dried chick peas to reduce sodium content. My batch made 2269 grams or about 115 grams/serving for 20 servings.

Recipe Ingredients for Basic Hummus (Low Sodium)

2 cup Chickpeas (Garbanzo Beans, Bengal Gram), Mature Seeds
250 grams Onions
50 grams Garlic
41 grams Olive Oil
37 1/2 grams Lemon Juice, Canned Or Bottled

Recipe Directions for Basic Hummus (Low Sodium)

  1. Ingredients: 2 cups dried garbanzo beans, 1 onion, 2 bulbs of garlic, 5 tablespoons of Tahini, 3 tablespoons of olive oil, teaspoon of cumin.

  2. Soak beans overnight...in water.

  3. Rinse beans, in fresh water, cook beans, bring to boil then simmer for 90 minutes or until soft.

  4. chop onion, peel garlic, saute in 10 grams or so of olive oil until soft.

  5. In batches, depending on the size of your food processor, grind everything together. Mine took 4 batches. Add in a portion of the onion garlic saute, beans, tahini, lemon juice, cumin, and olive oil.

  6. If the ingredients aren't moving in the food processor, add water, one tablespoon at a time, until things are moving. I like to "puree" mine for 2 minutes, once things are moving. You might want to wear earplugs depending on how loud your food processor gets.

  7. This is a very low sodium (bland) food, feel free to spice it up with salt, cayenne, more lemon juice, whatever.
