Low sugar zucchini bread with made with whole-grain flour.

Recipe Ingredients for Basic Healthy Zucchini Bread

1 cup flour, white
1 cup flour, whole wheat
3/4 cup brown sugar
2 eggs, extra large
1/3 cup olive oil
2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
2 cups zucchini, grated
3/4 cup milk, 2%

Recipe Directions for Basic Healthy Zucchini Bread

  1. Preheat oven to 350 F.

  2. Grease a 9 x 5 loaf pan.

  3. Mix together wet ingredients along with grated zucchini and sugar. In another large bowl, stir together dry ingredients. Add the wet ingredients and stir until just combined. Scoop batter into a greased loaf pan. Bake at 350 until a knife inserted in the center comes out clean (about an hour).
