A very basic recipe you can throw together quickly - and add additional items as you like. Sometimes we add brown rice to the inside.

Recipe Ingredients for Basic Green Chicken Enchiladas

16 oz boneless skinless chicken breasts
16 oz green enchilada sauce
1/2 cup shredded cheddar cheese
4 oz sliced olives
12 corn tortillas

Recipe Directions for Basic Green Chicken Enchiladas

  1. Cook and shred chicken breasts

  2. Place about 1/2 cup shredded chicken and some green sauce on a tortilla, roll up and place in 9x13 casserole dish. Continue until dish is filled.

  3. Pour remaining green sauce over the enchiladas, place sliced green olives and shredded cheese on top.

  4. Bake for 1 hour at 375.
