My recipe for basic Greek salad without the feta cheese or olives. N R

Recipe Ingredients for Basic Greek Salad - Tomato, Cucumber, Onion, Lettuce

1 medium tomato
3/4 cup lettuce
1/2 small cucumber
1/4 small onion
2 tsp extra virgin olive oil
2 tsp balsamic vinegar
1 dash salt
1/8 tsp pepper

Recipe Directions for Basic Greek Salad - Tomato, Cucumber, Onion, Lettuce

  1. Cut tomatoes in approx 1 inch cubes. If the tomatoes are hard, cut into much smaller cubes.

  2. Use hand shredder to slice cucumbers and onions.

  3. Use dark green lettuce: either the dark green part of the romaine (most authentic), or red or green leaf lettuce.

  4. Toss ingredients in the bowl you will eat out of (approx 8" across the top).

  5. The key to this recipe is the whole tomato. Anyone on a diet should have one or two of these salads per day. Best with a side of boneless grilled chicken breast, some of which is sliced into to salad.

  6. Feta cheese and olive lovers, you may add these. Recipe to be provided later.
