Basic Gazpacho Recipe

Delicious basic recipe. Balsamic Vinegar can be used in place of Red-Wine Vinegar but use less. You can also replace the Worcestershire sauce with Tabasco sauce. Sometimes I add celery or whatever fresh veggies I have around the house. Great with tortilla chips sprinkled on top.

Recipe Ingredients for Basic Gazpacho

2 cups cucumber, peeled and diced (1/4 inch)
2 cups red bell pepper, diced (1/4 inch)
2 cups tomato, ripe, diced (1/4 inch)
1/2 cup red onion, diced (1/4 inch)
16 oz V8 100% Vegetable Juice
1/2 cup red-wine vinegar
1/3 cup extra-virgin olive oil
2 teaspoons Worcestershire sauce
1 teaspoon crushed red pepper
1 clove garlic
1 tablespoon cilantro
1 tablespoon parsley
1 pepper to taste

Recipe Directions for Basic Gazpacho

  1. Chop veggies and herbs

  2. Toss with olive oil, vinegar, worcestershire sauce, and red pepper

  3. Pepper to taste

  4. Put half of the mixture in a blender or food processor and pulse to coarsely puree the contents.

  5. Return the pureed mixture to the bowl and stir to combine.

  6. Stir in V8 juice

  7. Chill
