Crepes look like ultra-thn pancakes. They are most frequently found on fancy breakfast menus. They are terrific for a lazy Sunday morning. Versitile toppings and fillings can be set up for individual choices buffet style. Suggestions: syrup and fruit toppings. butter and sugar & cinnamon filling, meats or seafood, cheese or sated veggies. For dessert top crepes with ice cream and melted chocolate.

Recipe Ingredients for Basic Crepes

3 large eggs
1 cup flour
1 cup milk
2 tablespoons butter, melted and cooled
2 tablespoons sugar (omit ofr savory crepes)

Recipe Directions for Basic Crepes

  1. Wisk all ingredients together until well blended and smooth.

  2. Let set in the fridge for at least and hour and up to a day to allow the gluten in the flour to relax, resulting in a smoother batter theat will be easier to work with when it comes time to cook.The finished batter should have a thickly liquid consistency, like heavy whipping cream.

  3. Using an 8 inch skillet, oil the ban just enough that the crepes won't stick.

  4. Let the pan heat up for two minutes or so on med-high, then lift the ban by the hanle and hold it at a slant.

  5. As you pour in a small amount of batter (scant 1/4 for an 8 in pan)swirl the pan around to spread the batter evenly across the bottom. If the pan is properly heated, the crepe should begin to set right away.

  6. Fill in any holes in your crepe with a drop of batter from a spooon.

  7. Once the crepe is set (two to tree minutes tops), gently loosen the edges of the crepe with a spatula.

  8. Quickly flip the crepe over.

  9. Gently press the flipped crepe down on the pan, and cook for another 30 secons or so.

  10. The finished crepe will be a light golden color (whiter if you've left out the sugar) and flexible.

  11. Fill, roll or fold and enjoy.
