1 serving = 1/4 cup or less. Use this as a basic rich cream sauce. May make with fat free half & half; don't sub on the butter.

Recipe Ingredients for Basic Cream Sauce for Vegetables

1 1/2 tablespoons butter
1 1/2 tablespoons flour
1 1/2 cups half and half
1/4 tsp salt
1/4 tsp black pepper

Recipe Directions for Basic Cream Sauce for Vegetables

  1. Cook your vegetables and drain. These can be chopped cabbage, asparagus, broccoli or cauliflower, spinach, green beans, peas, parsnips and carrots, turnips - any vegetable you like. Be sure there are enough vegetables to serve about 8 people, and cook them to your liking. Do not undercook unless you like them that way.

  2. While vegetables are cooking, melt butter in saucepan over medium-low heat. Stir in flour until smooth. SLOWLY stir in half and half and cook, stirring constantly, until mixture thickens up. Season with salt and pepper. This may take 5 minutes or so.

  3. Pour cream sauce over vegetables and mix well. If desired, you can turn mixture into a buttered casserole and top with buttered bread crumbs and parmesan cheese, then bake at 325 until topping is brown, about 25 minutes. But really, the vegetables are good with just the cream sauce stirred into them.
