use 4 cobs of corn, and cut the nibblets off, saving the cobs for stock making

Recipe Ingredients for Basic corn soup

3 cups of corn
1 large onion, chopped
1 tbsp olive oil
2 cups 1% milk
4 cups of water
1 large tomato, chopped
1 large potato, chopped
1 salt and pepper

Recipe Directions for Basic corn soup

  1. boil cobs in water for 30 minutes, discard

  2. in separate pot, saute onion in olive oil until soft

  3. Add stock and potato, and simmer until potato is cooked.

  4. Add corn, cook for 5 minutes, then add milk and tomato and heat through

  5. Salt and Pepper to taste
