Recipe Ingredients for Basic Corn Muffins

1 1/4 cup cornmeal
1 1/4 cup all-purpose flour
1/8 cup white sugar
1 1/2 teaspoons baking powder
1/2 teaspoon salt
2 eggs, beaten
4 T unsalted butter, melted
1 1/4 cup milk
1 c cheddar cheese, shredded
1/4 c green onions, sliced

Recipe Directions for Basic Corn Muffins

  1. Preheat oven to 400 degrees F.

  2. Grease muffin pan or line with paper muffin liners.

  3. In a large bowl, mix together corn meal, flour, sugar, baking powder and salt.

  4. Separately, beat together the eggs, butter and milk.

  5. Stir the wet ingrediants gently into the dry ingredients

  6. Spoon batter into prepared muffin cups.

  7. Bake for 20 to 25 minutes, or until a toothpick inserted into a muffin comes out clean.
