Soup requires further addition of spices, basil or rosemary. Cumin, chili and lime, garnished with cilantro and avocado is a Mexican option. Lemongrass, rice noodles (should be softened in hot water), cabbage, green onions and mushrooms, fresh ginger and soy sauce is an Asian option (remove lemongrass before serving and add rice noodles).

Recipe Ingredients for basic chicken soup

32 oz chicken broth
2 cups roasted chicken
1/2 cup celery
1/2 cup onions
1/2 cup carrots
1 1/2 teaspoon salt
1 tablespoon minced garlic
1 tablespoon olive oil

Recipe Directions for basic chicken soup

  1. Roast chicken until cooked with crispy skin, or use store bought rotisserie chicken. Separate skin and bones from meat.

  2. Cover skin and bones with at least 3 inches of water in a large pot, add some bay leaves and simmer for a minimum of an hour.

  3. After straining bones and skin from broth, add chicken meat to broth and simmer for about 10 minutes or so. Separate out the meat again and chop or tear it to desirable size pieces.

  4. The chicken should render enough meat and broth for two recipes.

  5. Chop vegetables and saute in olive oil. Add chicken and continue sauteing. Pour a cup or two of broth into vegetable and chicken, then return all to broth pot. Add desired spices or additions.
