Homey chicken soup made without noodles. Made like this when bones aren't available for the base.

Recipe Ingredients for Basic Chicken Soup

126 g Raw Celery
348 g Raw Carrots
194 g Raw Onion
19 4/5 oz Raw Boneless, Skinless Chicken Thighs
12 2/5 oz Raw Boneless, Skinless Chicken Breasts
1 tsp Sea Salt
557 with skin White Potatoes
50 g Garlic
55 g Chili Sauce
45 g Clover Honey
5 g Dried Parsley
539 g corn
2 gallons water

Recipe Directions for Basic Chicken Soup

  1. Boil the water in a large pot.

  2. Prepare your produce and put the vegetable scraps (such as the celery tops) into the pot. You can peel the potatoes if you desire, but that will alter the fiber and nutrient content of the dish.

  3. Put your chicken pieces into the pot. You can leave them whole or cut them, as you desire. They will be cut later.

  4. Lower the heat to a simmer, and let your vegetable scraps and chicken cook for at least an hour.

  5. Remove your vegetable scraps and discard. Remove the chicken from the pot and put it on a plate or in a dish to rest.

  6. Put the longer cooking vegetables in the pot first, such as the carrots and potatoes.

  7. After the longer cooking vegetables are nearly cooked through, re-add the chicken and the other vegetables. Season the soup at this point.

  8. Simmer until everything is fully cooked and tender.

  9. Serve and enjoy.

  10. NOTE TO VEGETARIANS AND VEGANS - You could easily make this into a vegetable soup by omitting the chicken. Vegans can also omit the honey, and try a vegan friendly sweetener for a sweet taste, such as boiling an orange in with the vegetable scraps.
