Recipe Ingredients for Basic Butternut Squash Soup

1360 grams Squash, Winter, Butternut
759 grams Potato, Flesh And Skin
638 grams Onions
242 grams Garlic
30 grams Olive Oil
2 cup Cream, Fluid, Half And Half
960 grams Organic Low Sodium Chicken Broth
4 cup (8 fl oz) Water

Recipe Directions for Basic Butternut Squash Soup

  1. Peel Squash, Onions, Garlic

  2. Chop Squash, potatos, place on cookie sheets, drizzle with olive oil, bake in oven for 30 minutes total, flip after 15.

  3. Chop Onions and Garlic, add to cookie sheets, drizzle with olive oil, bake for 30 minutes, flip after 15. (At the end, Squash and Potato will have baked for 60 minutes total)

  4. After roasting, add everything to a pot with water and chicken broth and simmer for 20 minutes.

  5. Blender the soup to make it smooth, use a plunge blender or pour everything into a bowl and blender, then blend, then return to pot.

  6. After all is purreed, add in the half and half and simmer for 20 minutes.

  7. Enjoy! (Also season to taste, no salt has been added to keep sodium to the minimum)
