Adapted from Sainsbury's Vegetarian cookbook

Recipe Ingredients for Basic Bread

1 tablespoon dry active yeast
1 teaspoon sugar
1 3/4 cups water
3/4 cups whole wheat flour
3 cups plain flour
1 teaspoon salt
2 tablespoons olive oil

Recipe Directions for Basic Bread

  1. Mix yeast with sugar and a little warm water. Add the rest of the water when the mixture is smooth. Set aside until mixture is frothy.

  2. In a large mixing bowl, sift flours together with salt and mix with oil.

  3. Add yeast mixture to flour mixture and fold in until dough becomes elastic. Knead thoroughly on a floured board for 5 minutes, until light and smooth.

  4. Put in a clean, oiled bowl and cover with a tea towel. Leave to rise in a warm place for 40 minutes.

  5. Knead the dough for a further 5 minutes, then form it into a loaf shape. Place in oiled, 2 lb. loaf tin, make 3 diagonal incisions across the loaf and cover with tea towel. Leave to rise in a warm place for 20 minutes.

  6. Preheat oven to 400F and bake for 35-40 minutes, until well browned. Cool on a wire rack for a few minutes, then invert pan to turn the loaf out. Leave to cool.
