Recipe Ingredients for Basic Berry Muffins

1 cup oats
3 3/4 teaspoons fresh lemon juice
1 1/4 cup fat free milk
1/2 cup Honey
1/4 cup Canola Oil
1 egg
1 1/2 cups whole wheat flour
1 teaspoon baking soda
1/2 cup Blueberries
1/4 cup Blackberries

Recipe Directions for Basic Berry Muffins

  1. **all berries must be crushed to get 1/2 cup of pulp and 1/4 cup juice

  2. Preheat oven to 375 degrees.

  3. Combine oats, lemon juice and milk and mix well. Set aside 5 minutes.

  4. Grease muffin pans.

  5. Mix honey, egg, and oil to milk mixture. Blend well.

  6. Combine Flour, baking soda. Add to milk mixture just until moist.

  7. Stir in berry pulp and juice

  8. Fill muffin pan.

  9. Bake at 375 degrees for 20-25 minutes
