Tasty base for a vegetarian Shepherd's Pie, just requires a mashed potato topping.

Recipe Ingredients for Base for Vegetarian Shepherd's pie

1 tsp olive oil
1 onion
2 cloves garlic
1 large carrot
100 g parsnip
125 g mushrooms, chopped
439 g beans, cooked or canned
411 g canned diced tomatoes
1 tbsp tomato puree
1 tsp worcestershire sauce

Recipe Directions for Base for Vegetarian Shepherd's pie

  1. Gently fry onion and garlic in the olive oil.

  2. Add the rest of the ingredients and cook gently for 30 mins, or until vegetables tender and beans beginning to break down. Add water as necessary to avoid burning. Place into pie dish and top with mash potato and cheese. Cook for 15-20mins at 375F to melt the cheese.
