A close approximation to the base curry sauce used in Indian takeaways ... but with about a third of the fat and calories!

Recipe Ingredients for Base Curry Sauce

1 large onion
3 cloves garlic
1 teaspoon ginger
4 teaspoons curry powder
400 g chopped tomato
1 pint stock
1/2 teaspoon salt
1 teaspoon sugar
50 g butter

Recipe Directions for Base Curry Sauce

  1. place onion, garlic & ginger in a blender and blend until smooth

  2. in a large pan or wok, melt butter

  3. add blender mix, curry powder and any other spices you care for

  4. Allow onions and spices to cook

  5. Add stock, sugar and salt

  6. Allow to simmer for approx 20 minutes
