2 1/2 cups flour
1 teaspoon baking soda
1 teaspoon espresso powder or cinnamon
1/4 teaspoon salt
1 cup cocoa powder
2 sticks margarine
1 teaspoon vanilla
1 3/4 cups sugar
1 egg
1 tablespoon water
2 cups sugar
1 cup flour
4 eggs
1 stick margarine, melted and cooled
2 teaspoon vanilla
1 teaspoon cinnamon
1/4 teaspoon salt
2 cups chocolate chips
2 cups macadamia nuts, chopped

Recipe Directions for Bars: Chocolate Cookie Base with Chocolate Chip-Macadamia Nut Filling

  1. Preheat the oven to 350F.

  2. In a bag mix the flour, baking soda, espresso, salt and cocoa.

  3. Beat the margarine until creamy and add the vanilla, sugar, egg and water.

  4. Slowly mix in the flour mixture until just combined.

  5. Press into a 9x13 inch pan and bake 5-10 minutes or until barely set.

  6. Remove from heat and let cool.

  7. As the cookie base cools, whisk the sugar, flour, eggs, butter vanilla, cinnamon and salt until well combined. Stir in the chocolate chips and nuts.

  8. Pour into shortbread crust and smooth top.

  9. Bake 50-60 minutes or until toothpick inserted into cake comes out clean.

  10. Cool on wire rack. Cut into 48 cubes and enjoy.

  11. Cake keeps covered at room temperature (or in the fridge if under-baked slightly) for about a week.
