Recipe Ingredients for Barradmundi with warm kale and Pumpkin Salad

300 grams Barramundi Fillets
200 grams Fresh Kale
150 grams Pumpkin
4 small Radish
2 tablespoons Walnuts
2 tablespoons Balsamic Vinegar

Recipe Directions for Barradmundi with warm kale and Pumpkin Salad

  1. Fill a saucepan with water and bring to the boil. Cut pumpkin into small cubes, add to saucepan and cook until pumpkin is soft through the middle.

  2. Heat a non stick fry pan on medium and cook the barramundi fillets for 3-3 minutes each side.

  3. While barramundi is cooking, slich radish into thin strips and place into a salad bowl.

  4. When pumpkin is cooked, remove from the saucepan and add into the salad bowl.

  5. Remove barramundi from the pan and cut into strips, adding to the salad. Now place kale onto the pan with a tablespoon of water and wilt.

  6. Add kale into the salad bowl and mix.

  7. Evenly distribute the salad onto two plates, then crumble a tablespoon of walnuts over the top and drizzle with balsamic vinegar before serving.
