Recipe Ingredients for barley vegetable stew

6 c barley
3 c Chicken broth
3 c celery
3 c diced tomatoes
4 c water
1 c diced onion
1 tbsp salt
1 1/2 tbsp pepper
1 tsp nutmeg
1 tsp paprika
2 tbsp garlic salt

Recipe Directions for barley vegetable stew

  1. Bring 4 cups of water to a boil

  2. add 2 tbsp garlic salt to boiling water

  3. Add 6 cups (1 box) of Quaker quick cook barley

  4. Boil for 10 minutes

  5. Reduce heat and add diced vegetables and broth

  6. simmer for another 10 minutes

  7. add remaining spices and simmer

  8. adjust spices to taste
