Recipe Ingredients for Barley-Vegetable Casserole

2 T olive oil
2/3 c barley, uncooked (4 1/2 oz)
1 c onions, chopped
1 c celery, sliced
1 c mushrooms, chopped
1 c carrots, chopped
3 cloves garlic, chopped
1 1/2 c (1 can) diced tomatoes with juice
2 1/2 c beef broth, low-fat
1 1/2 c (1can) black beans or other beans or lentils, rinsed & drained
1/2 t black pepper
1/4 t cayenne pepper
1/4 c fresh parsley, chopped fine
1/4 c fresh basil, chopped fine

Recipe Directions for Barley-Vegetable Casserole

  1. Preheat oven to 350 degrees.

  2. Spray 2-quart casserole with non-stick spray.

  3. Rinse canned beans and drain well. Add to casserole.

  4. Heat 1 T olive oil in a heavy skillet over medium heat. Add barley and cook 3-4 minutes, stirring frequently, until lightly browned. Place in prepared casserole.

  5. Add remaining 1 T olive oil. Add onions and celery. Cook 5 minutes, stirring frequently. Add carrots, garlic, mushrooms, and canned tomatoes and cook 5 minutes, stirring. Add vegetables to casserole.

  6. In a small bowl, combine beef broth, black and red peppers, parsley and basil. Mix well and add to casserole.

  7. Mix well, cover, and bake 1 hour and 15 minutes, until barley is tender and most of the liquid has been absorbed. Stir several times while baking.

  8. Let stand 5 minutes, then mix and serve.
