Tabouli using barley instead of bulgar wheat

Recipe Ingredients for Barley Tabouli

4 cups cooked barley
1/4 cup olive oil
2 cloves garlic
1 cup minced mint leaves
1/2 cup minced dill
2 cups diced tomatoes
2 cups diced cucumbers
1/2 cup sliced scallions
3 T lemon juice

Recipe Directions for Barley Tabouli

Mix barley with olive oil, lemon juice, and garlic. Add remaining ingredients and toss well. Salt and pepper to taste. Garnish with extra mint and dill, if desired. Allow to set for one hour to marinate flavors before serving.
