Barley and Lentil Tabbouleh salad with fresh vegetables

Recipe Ingredients for Barley Tabbouleh

1 tsp. ground oregano
1/4 cup parsley
1 tbsp. lemon juice
1/2 cup dry pearl barley
1 cup cooked lentils
1 cup chopped raw onions
1 cup chopped tomato
1/2 cup chopped raw carrots
2 cups vegetable broth
1 cup cucumber, diced
1 tsp olive oil
4 oz. kalamata olives

Recipe Directions for Barley Tabbouleh

Combine barley and broth in a saucepan. Set pan over high heat and bring to a boil. Reduce heat to low, cover and cook 45 minutes until barley is tender. Drain any excess water and transfer barley to a large bowl. Add lentils, lemon juice, olive oil and oregano and toss to combine. Add vegetables and parsley; toss again. Season to taste with salt and pepper. Serve warm or chilled.
