Recipe Ingredients for Barley and Sweet Potato Chili

1 tbsp cumin seeds
1 tbsp olive oil
3 cloves garlic, minced
2 onions, chopped
1 tsp dried basil
1 tsp salt
1/2 tsp black pepper
1/2 cup pot barley
796 ml canned tomatoes
1 cup broth, vegetable
660 g sweetpotato
14 ounce can beans, black
1 tbsp chili powder
1 tbsp lime juice
4 cups kale, chopped
1 jalapeno pepper
1 tbsp chili powder
1 tsp lime juice

Recipe Directions for Barley and Sweet Potato Chili

  1. Toast the cumin seed in a dry frying pan, about 3 minutes. Immediately transfer to a mortar or spice grinder and grind. Set aside.

  2. In same skillet, heat oil over medium heat for 30 seconds. Add onions and cook, stirring, until softened, about 3 minutes. Add garlic, oregano, salt, pepper and reserved cumin and cook, stirring, for 1 minute. Add barley and stir will. Add tomatoes with juice and bring to a boil. Transfer to slow cooker stoneware. Add vegetable stock, sweet potatoes and beans.

  3. Cover and cook on low for 6 to 8 hours or on High for 3 to 4 hours, until barley and sweet potatoes are tender. Stir in chili powder mixed with lime juice. Cover and cook on High for 20 to 30 minutes. Serve with roasted pepper strips and cilantro, if desired.
