Tasty mix of flavors cassarole style.

Recipe Ingredients for barley, sausage and greens

1 1/2 T extra virgin olive oil
1 T butter
1/2 yellow onion
2 T shallot
3 cloves garlic
2 cups cabbage
1/2 cup white wine
1 1/2 cups barley
4 links of italian sausage
6 leaves chard
2 cups spinach
3 cups beef broth
4 T dijon mustard
2 t salt
2 t worchestershire sauce
2 t paprika

Recipe Directions for barley, sausage and greens

sautee onion, shallot, cabbage and garlic in oil, add barley after rinsing, add butter and sautee 2 mins. add white wine and stir until absorbed. Add broth and bring to a boil, reduce heat to low and cover, simmering for 30mins, add chard stems and sausage cut into rounds. Simmer 15 mins or more until barley is tender. Add mustard and stir well. Cover and let sit for 5 min. Stir in spinach until limp. Cover if necessary and let sit a few more mins.
