Recipe Ingredients for Barley salad

1 cup barley
4 cups water
3 tablespoons orange juice
2 tablespoons light olive oil
1/2 cup olives, chopped
1/4 cup cashews
1/2 cup parmesan cheese
4 servings bacon
2 teaspoons black pepper

Recipe Directions for Barley salad

  1. Cook the barley in the water until tender.

  2. Whisk together orange juice and oil. Season with salt if desired.

  3. Mix together the barley and the rest of the ingredients. Pour dressing over salad and toss to coat.
