A simple cooked barley salad. I like to add chickpea salad to this to make a simple lunch main course.

Recipe Ingredients for Barley Salad

1 c. dry pearled barley
2 c water
2 tbsp fresh lemon juice
2 tsp dried mint leaves
2 tsp olive oil
1 tbsp Splenda

Recipe Directions for Barley Salad

  1. Bring barley and water to boil

  2. Reduce heat and simmer until water is absorbed (about 30 min)

  3. Stir in lemon juice, Splenda and olive oil

  4. Serve at room temperature or cold.
