Recipe Ingredients for Barley Risotto

3/8 c barley
1/4 c diced tomatoes
1/8 onion, chopped
1 clove garlic, chopped
1 c Chicken Broth
3/4 tsp olive oil
1 dash salt
1 dash pepper
1/8 cup grated parmesan cheese

Recipe Directions for Barley Risotto

  1. Sautee onion and garlic in olive oil

  2. Add barley and toast for 5 minutes, stirring constantly

  3. Combine rest of ingredients and simmer for 25 minutes

  4. Remove from heat and stir in parmesan cheese
