Recipe Ingredients for Barley Risotto, 1/3 recipe

2 tsp extra virgin olive oil
8 oz mushrooms, sliced
1 onion, finely chopped
4 cloves garlic, minced
1 tsp dried Italian seasoning
1 cup pot barley
2 cups sodium reduced chicken or vegetable broth
2 cups water
1/2 cup sundried tomatoes, chopped
1/4 cup Philadelphia cream cheese, calorie reduced, herb and garlic

Recipe Directions for Barley Risotto, 1/3 recipe

  1. In saucepan, heat oil over medium high heat and cook mushrooms, onion, garlic and Italian seasoning, stirring for about 15 minutes or until no liquid remains.

  2. Stir in barley to coat. Add broth,water and sundried tomatoes and bring to boil.

  3. Reduce heat to medium low; cover and simmer for 20 minutes.

  4. Uncover and cook for about 20 minutes more, or until barley is tender but firm.

  5. Stir in cream cheese until melted and creamy; cover and let stand 5 minutes before serving.
