The BEST version of the Classic Thorn Barley-Rice. This is made without meat (making it a perfect side dish to any meat or fish!) and loaded with summer tomatoes, peppers and zucchini.

Recipe Ingredients for Barley-Rice Pilaf BEST Garden Tomato Zucchini & Peppers (Meatless) [8 oz.]

1 1/2 cups pearl barley
1 cup brown rice
1/4 cups wild rice
2 cups fresh onion
2 cups fresh tomatoes
1 1/2 cups fresh zucchini
5 cups water
1/4 cup basil, dried
4 tbsp minced garlic
4 tbsp dehydrated onion
4 tbsp Italian seasoning
4 tbsp sesame seeds
2 tbsp chicken bouillon
1 tbsp black pepper

Recipe Directions for Barley-Rice Pilaf BEST Garden Tomato Zucchini & Peppers (Meatless) [8 oz.]

  1. Combine all ingredients in a stainless steel pot.

  2. Heat to boil.

  3. Immediately reduce heat to simmer for one hour, checking occassionally.

  4. Add more liquid if necessary.

  5. When barley is tender, turn off heat.

  6. Sit covered for two more hours before serving.
