Modification uses microwave. Original calls for eating cold but it tastes good hot for breakfast!

Recipe Ingredients for Barley Pudding

15.93 g (2tbs) barley flour.(55)
1 tbs splenda.
1/16 tsp salt
1/2 cup of water (boiling)
1/2 c lite soy milk (45)
100 g (2) eggs (140)
1 tsp brown sugar

Recipe Directions for Barley Pudding

  1. -Mix the flour, splenda, sugar, and salt in a deep microwave dish with a little cold water.

  2. -When smooth and free from lumps pour in the hot water, slowly stirring meanwhile to keep it smooth.

  3. -Microwave 1 minute on high power and 4 minutes at 50% power, stopping to stir every minute to prevent sticking.

  4. -Add milk with stirring then blend in eggs.

  5. --Microwave 1 minute on high power and 3 minutes at 50% power or until eggs are coagulated, stopping to stir every minute.

  6. -Serve hot or cold as desired.
