This recipe is becoming a staple in my life. I put whatever died veggies I can find into it. The only important proportion in this recipe is 1:1 barley to stock. You may have to add water once it absorbs the stock.

Recipe Ingredients for Barley Pilaf v1

8 cups pearled barley
8 cups chicken stock
1/2 cup carrots
2 small onions
2 tbs lemon juice
4 tbs butter
1 1/2 cups mushrooms

Recipe Directions for Barley Pilaf v1

  1. Melt the butter in a big pot while you prep and dice the veggies.

  2. Cook the onions in the butter until clear

  3. Add in the barley and toast it in the butter until fragrant. Be careful to stir often and not allow it to stick.

  4. Toss in the chicken stock and the bay leaves.

  5. Bring to a boil, then cover and reduce to a simmer. Cook about 25 minutes until barley is tender.

  6. Toss in the other veggies and cook for about 5 minutes until veggies are tender.
