Recipe Ingredients for Barley Pilaf

1 cup barley, pearl
1 cup low sodium chicken broth
2 cups water
3 tbsp olive oil
1 cup peppers, chopped
1 yellow onion, chopped
1 tbsp minced garlic

Recipe Directions for Barley Pilaf

  1. prepare barley according to instructions using water & broth

  2. saute onion & pepper in 1 tbsp oil

  3. once cooked push onoin & pepper to edge of pan to make room for pork chops

  4. add remaining oil

  5. cook pork chops approx 3-4 min per side

  6. remove pork chops and let stand

  7. add cooked barley to onions and pepper and stir

  8. add a side of veggies - serve & enjoy!
