Recipe Ingredients for Barley Pilaf with Bacon

3 slices turkey bacon
1 cup uncooked pearl barley
1 onion small
1/2 cup mushrooms, sliced
3 cups low sodium beef broth
1/4 tsp pepper

Recipe Directions for Barley Pilaf with Bacon

  1. In a small nonstick skillet, cook bacon over medium heat until crisp, remove to paper towel. Crumble when cool

  2. In the drippings, saute the barley, onion and mushrooms until barley is lightly browned and vegetables are tender.

  3. Transfer to a 1 1/2 Qt baking dish coated with cooking spray. Stir in broth and pepper. Cover and bake at 350 for 1 hour.

  4. Bake 5-10 minutes longer or until the barley is tender and the liquid is absorbed.
