Recipe Ingredients for Barley and Mushrooms

2 cups Water
1/4 tsp Salt
1 cup Quick Barley
1 medium Onion, sliced
8 oz. Mushrooms, sliced
1 tbsp Olive Oil
2 cloves Garlic
1 cup Grape Tomatoes, halved
1/8 tsp Black Pepper
3 tbsp chopped fresh Parsley

Recipe Directions for Barley and Mushrooms

  1. Bring water and 1/8 tsp salt to boil in a saucepan. Add Barley, cover and cook over med-low heat until all liquid is absorbed, 12 min. Let stand 5 min.

  2. Cook onion and mushrooms in oil in skillet over med-high heat while barley cooks. Saute till browned, 8 min. Add garlic, tomatoes, pepper and 1/8 tsp salt. Cook 3 min. Add barley, cook 1 min. Turn off heat, stir in parsley. Cover 5 min.
