This is an experiment and I won't taste it until dinner time so I'll report any changes then! I am unsure of the apple cider vinegar I might have added too much it smelled pretty vinegary... You could also reduce olive oil if you want or even skip it but I like olive oil.

Recipe Ingredients for Barley with Mushrooms and Herbs

1 cup Medium Barley
4 tsp olive oil
100 grams yellow onion
120 grams baby bella mushrooms
5 cups water
2 tablespoons apple cider vinegar
2 tablespoons fresh oregano
1/2 cup fresh basil
1 tbsp garlic powder
2 tsp black pepper

Recipe Directions for Barley with Mushrooms and Herbs

  1. Boil water in pot.

  2. Add barley, reduce to simmer, cook 45-50 minutes.

  3. Chop mushrooms and dice onion in mean time. Add spices, olive oil, and vinegar to the mushroom-onion mix and let this chill.

  4. When barley is just nearly done, stir in the mushroom-veggie mix.

  5. Cook a few minutes or until the mushrooms and onions look cooked.

  6. Stir in the garlic powder, pepper, stir.

  7. Stir in the fresh herbs.

  8. Remove from heat and wa-la!
