Recipe Ingredients for Barley with Mushrooms and Browned Onions

1 cup pearled barley
1 1/2 tbsp extra virgin olive oil
2 large onions, thinly sliced
8 ounces sliced cremini mushrooms
2 tbsp fresh dill, minced

Recipe Directions for Barley with Mushrooms and Browned Onions

  1. Bring 3 cups water to a rapid simmer in a medium saucepan and stir in barley. Cover and simmer until water is absorbed, 35-40 minutes. Taste, and if you prefer more tender add 1/2 cup water and simmer till absorbed.

  2. Meanwhile, heat the oil in a wide skillet. Add onion and saute slowly over low heat until lightly and evenly browned.

  3. Add mushrooms and about 1/4 cup water. Cover and cook over medium heat until mushrooms are wilted, about 8 minutes.

  4. Combine onion and mushroom mixture with cooked barley in a serving container. Stir in the dill, salt and pepper.
