I usually like pressure cooker recipes better, but this was easy and pretty decent.

Recipe Ingredients for Barley, Mushroom, and Onion Soup, slow-cooker

1 cup pearl barley
8 cups beef broth, low sodium
2 tablespoons olive oil
1 onion, thinly sliced
1/2 ounce dried mushrooms
2 tablespoons tomato sauce
1/2 cup carrot, diced
1 cup celery, diced
2 tablespoons parsley, fresh
1 tablespoon salt

Recipe Directions for Barley, Mushroom, and Onion Soup, slow-cooker

After sauteing onion, pre-soaked and sliced dried mushrooms, put barley, broth, and all ingredients up to parsley into the slow cooker. Cook on low for 6-8 hours. Add parsley, salt, pepper to taste. Parmesan cheese also tastes good on top.
