Recipe Ingredients for Barley and Mushroom Casserole

8 ounces fresh sliced mushrooms
4 ounces chopped onion
1/2 cup pearled barley
1/2 teaspoon salt
1/8 teaspoon pepper
1 cup chicken broth
1 cup water

Recipe Directions for Barley and Mushroom Casserole

  1. Preheat oven to 350.

  2. To a large skillet over medium-low heat add mushrooms and chopped onion. Sauté until lightly browned. Add barley and brown lightly, stirring. Add salt and pepper.

  3. Pour chicken broth into the skillet and cook until hot. Cover and bake in a preheated 350° oven for 1 1/2 hours, or until barley is tender. Check the barley occasionally and add more broth or water if needed.
