Recipe Ingredients for Barley Minestrone with Pesto

1 c pearl barley
1 tbsp olive oil
2 c green cabbage, thinly sliced
2 large carrots, chopped
2 stalks celery, chopped
1 medium onion, chopped
2 garlic cloves, minced
3 c vegetable broth
3 c water
15 oz diced tomatoes
1 zucchini, chopped
4 oz green beans, chopped

Recipe Directions for Barley Minestrone with Pesto

  1. Heat large pot over medium-high heat. Add the barley and cook until toasted and fragrant, 3-4 minutes, stirring constantly. Transfer barley to a small bowl and set aside.

  2. Using the same pot, heat oil over medium-high heat until hot. Add the cabbage, carrots, celery, and onion; cook until vegetables are tender and lightly browned, 8-10 minutes, stirring occasionally.

  3. Add the garlic and cook until fragrant, about 30 seconds. Stir in the barley, water, broth, and tomatoes. Cover and heat to boiling. Reduce heat to low and simmer 25 minutes.

  4. Stir in the zucchini and green beans; increase heat to medium, cover, and cook until all of the vegetables are just tender, 10-15 minutes.

  5. Serve topped with a dollop of pesto.
