I found this recipe online and modified it a bit. It's delicious and healthy!

Recipe Ingredients for Barley Lentil Soup

1 tablespoon canola oil
1 onion, coarsely chopped
5 garlic cloves, minced
1 large carrot, chopped
1 stalk celery, chopped
1 teaspoon dried thyme
1/8 teaspoon dried oregano
1/4 teaspoon pepper
6 cups water
4 beef bouillon cubes
1 cup green lentils
1/4 cup pearled barley

Recipe Directions for Barley Lentil Soup

  1. Melt bouillon cubes in water on stove.

  2. In large saucepan or soup pot, heat oil over medium heat.

  3. Saute onion, garlic, carrot, celery, thyme, oregano and pepper in oil until onions are softened, about 5 minutes.

  4. Add bouillon water, lentils and barley to the pot and bring to boil.

  5. Reduce heat, cover and simmer until barley and lentils are tender, about 40 minutes.
