Barley & lentil soup with carrots

Recipe Ingredients for Barley Lentil Soup

1 tbsp olive oil
1 cup onion, chopped
1 cup celery, chopped
2 cup carrot, chopped
10 cups water
1 cup pearl barley
1 tsp thyme leaves
1 1/2 cup lentils
1 tsp Worcestershire Sauce
1 tsp salt
1/2 tsp black pepper

Recipe Directions for Barley Lentil Soup

  1. Add the olive oil to a large stock pot and heat.

  2. Add the onion, celery and half of the carrots and the thyme and cook until the onion is transparent.

  3. Add half of the water and and bring to a boil.

  4. Lower the heat and simmer until the vegetables are tender.

  5. Transfer to a blender and puree.

  6. Return to the pot and add the rest of the water, carrots, barley and Worcestershire sauce.
