Recipe Ingredients for Barley & Lentil Soup with Greens

1 tbsp olive oil
1 1/2 cup chopped onion
1 1/2 cup chopped carrots, peeled
3 garlic cloves, minced
2 1/2 tsp ground cumin
10 cups low salt chicken broth
2/3 cup pearl barley
14 oz diced tomatoes in juice
2/3 cup dried lentils
2 cups mustard greens, coarsely chopped
2 cups spinach, chopped

Recipe Directions for Barley & Lentil Soup with Greens

  1. heat oil in heavy, large, non-reactive pot over medium-high heat.

  2. Add onions & carrots, saute until onions are golden brown, about 10 min.

  3. Add garlic & stir 1 minute, mix in cumin, stir 30 seconds.

  4. Add 10 cups broth & barley, bring to boil. Reduce heat, partially cover & simmer 25 minutes.

  5. Stir in tomatoes with juice & lentils, cover & simmer until barley & lentils are tender, about 30 minutes.

  6. Add greens to soup, cover & simmer until greens are tender, about 5 minutes.

  7. Season soup to taste with salt & pepper, thin with more broth if desired.
