1/8 cup olive oil 1 medium onion chopped 1 stalk celery chopped 1 carrot chopped 3/4 cup pearl barley 3/4 cup dry brown lentils 2 quarts vegetable broth 1/4 teaspoon dried thyme 1/4 teaspoon ground black pepper 1/4 teaspoon cumin 1 bay leaf 1 8 oz pkg sliced button mushrooms

2 serving Extra Virgin Olive Oil
1 medium (2-1/2" dia) Onions
1 stalk, medium (7-1/2" - 8" long) Celery
1 NLEA serving Carrots, Baby
3 serving Barley Medium Pearled (Quaker) 1/4 cup
3 serving Lentil
2 serving Vegetable Broth Organic (Swanson) 32 oz
0.25 Teaspoon Thyme
0.25 tsp Pepper, Black
0.6 grams Bay Leaf
1/4 tsp Cumin
8 oz Clean N Ready Mushrooms

Recipe Directions for Barley, Lentil & Mushroom Soup

Heat the olive oil and a 1 Tbsp vegetable broth in a large pot over medium heat. Add the onion, cook and stir until onions are limp, but not brown, about 5 min. Mix in the celery and carrot, cook for another 5 min. Stir in the barley and lentils so they are coated with oil, continue to cook and stir lightly until lightly toasted. Pour in the broth and season with thyme, pepper, cumin and the bay leaf. Bring to a boil, cover and simmer 25 minutes. Add the button mushrooms, cover and continue cooking for another 30 minutes, stirring occasionally. Serve.
