A simple dish that requires time. As is, it is nice. I have seasoned it with straight pepper (very good) and AntieArwen Indian Grain and Lentil Spice (meh). It's one of those fabulous bases that, if you mess up the spice, sriracha or tabasco sauce will correct it with minimal caloric intervention!

Recipe Ingredients for Barley Chick Pea pilaf

2 cups cooked barley
16 oz mushrooms
1 1/2 cup onion
1 cup cooked chick peas
4 tablespoons olive oil

Recipe Directions for Barley Chick Pea pilaf

  1. Soak barley overnight, then cook up in a rice cooker. If using dried chick peas, set them to soak.

  2. cook barley and, if needed, chick peas.

  3. Chop onions. Sautee mushrooms and onion in the olive oil. When finished, stir in barley and chick peas. Taste, and spice as desired.

  4. Makes 6 one-cup servings.
