These are my cheap version of something Morningstar makes. Although I have never eaten the Morningstar ones, too expensive. These are savory rice-like cakes. Good for lunch with a salad, or as a snack with leftover vegetables. EAT TWO.

Recipe Ingredients for Barley Cakes

1 cup uncooked Barley
1 cup frozen mixed vegetables
1/2 cup edamame
3 tbs fresh ginger
3 tbs soy sauce
8 tbs Wheat germ
1 egg white
1 tbs Whole wheat flour
1/2 cup sweet chili sauce
1/2 cup marinade
1 tbs Olive oil

Recipe Directions for Barley Cakes

  1. Cook the barley according to directions. let cool.

  2. lightly chop the frozen edamame. Julienne the ginger.

  3. mix the cooled barley, edamame, ginger, and mixed vegetables

  4. add the sweet chili sauce and lime marinade. add hot chili if you like.

  5. lightly beat an egg white and add it to the barley

  6. add the wheat germ. Mix.

  7. If mixture seems too loose, add flour a little at a time.

  8. Preheat oven to 350

  9. spray muffin tins with olive oil (you will make 24 cakes)

  10. put EMPTY but oiled muffin time in the oven for 1-2 minutes

  11. Carefully fill the hot muffin tins 2/3 way full with barley mixture

  12. bake for 25 minutes or until the surface of the cakes are golden.

  13. let cool in the tins 5 minutes. loosen cakes with a knife and invert muffin tin onto a serving tray or cookie sheet.

  14. serve right away or freeze for later.

  15. Makes 24 cakes. 2 cakes to a serving.
