Home made barley bread as an alternative to market sold ones. Especially for the diabetics and people complaints about cholesterol problems.

Recipe Ingredients for Barley Bread from Olga's Healthy Choice

250 g barley flour
150 g whole wheat flour
1/2 tbsp sea salt
200 g water

Recipe Directions for Barley Bread from Olga's Healthy Choice

  1. Wash and boil barleys, drain and keep aside.

  2. In a luke warm water, keep the yeast rest for ten minutes.

  3. In a large cup, put water, salt and all type of flours chosen. Keep 50 g of whole wheat flour aside to use later on.

  4. Add yeast and make a nice doug. You can add some more water when necessary. Keep doug in rest covering the cup with a cloth or a plastic for about an hour.

  5. Then, remove the doug on to the board and add the cooled boiled barleys and 50 g of whole wheat flour kept aside. Make a nice doug, again, adding some more water. Keep this doug aside at rest as usual for another hour.

  6. Pre-heat the oven at 125oC (electrical oven).

  7. On a baking tray place your loaf. Make some deep lines on your loaf and pure some whole wheat flour before putting in oven.

  8. It takes normally 45 minutes to bake properly. You may check through its cuts and its shape.

  9. After it is baked properly, you may remove the excess flour on the loaf and let aside cooled.

  10. Then, you may serve as fresh with a nice butter, cheese etc.

  11. Or you may keep in a plastic container in the refrigerator in slices dfor about two weeks.

  12. (you may divide two and keep one in refrigerator in a plastic bag for a week to bake later and serve freshly baked)
