Recipe Ingredients for barley asparagus risotto

1 1/2 cups barley
2 cups white wine
4 cups chicken broth
2 cups asparagus
1/2 cup grated cheese
2 tbspn olive oil

Recipe Directions for barley asparagus risotto

  1. heat one tablespoon olive oil in 8 quart pan

  2. add 1 cup diced onion and cook till translucent

  3. add 1.5 cups barley and cook 2 minutes

  4. add 2 cups white wine and cook on medium heat until liquid is almost totally absorbed

  5. add 1 ladle of chicken broth and cook till absorbed

  6. repeat until all broth is used

  7. in separate pan heat 1 tablespoon of olive oil

  8. cut asparagus into bit size pieces and saute until slightly tender

  9. add asparagus to cooked barley

  10. stir in .5 cup grated cheese and serve
