Albacore Tuna in a primavera carbonera

Recipe Ingredients for Barilla Rotini with Fresh Vegetables, Herbs, and Albacore Tuna

16 oz Rotini, Barilla
1 c White Onion, diced
1/2 c Extra Virgin Olive Oil
1 garlic clove
1 c carrot, diced
1 c Broccoli, diced
1 c Sugar Snap Peas
2 c Cherry Tomatoes, halved
1 1/2 tbsp Basil
1/4 tsp Oregano
1 tbsp Parsley
1 tsp Mint
1 c Parmesan Cheese
10 oz Albacore Tuna

Recipe Directions for Barilla Rotini with Fresh Vegetables, Herbs, and Albacore Tuna

  1. Cook pasta according to package directions. (Boil on high for 11 - 12 min). Meanwhile, dice onion and place into a skillet with half of olive oil and a garlic clove.

  2. Saute for 5 min over medium heat.

  3. Add carrot, broccoli, and peas, Season with salt and pepper, saute for 5 min.

  4. Add 1 c of warm water and continue to simmer until cooked through.

  5. Add tomatoes to t eh sauce

  6. Drain pasta and toss into the sauce, add herbs, remaining olive oil, and cheese.
