Used with V8 juice as a base, it is very yummy! Put a dash of Cajun spice for kick and added flavor!

Recipe Ingredients for Barb's Veggie Soup

48 ounces tomato juice
1/2 head cabbage
6 tomatoes
1 cup mushrooms
1 cup green beans
2 cups carrots
2 cups celery
2 cloves garlic

Recipe Directions for Barb's Veggie Soup

  1. Pour in the V8 juice

  2. add 4 cups of water

  3. Add chopped cabbage

  4. Add mushrooms

  5. Bring this to a boil

  6. Meanwhile, in a frying pan, add 1 teaspoon olive oil, chopped carrots, sliced celery, crushed garlic, and chopped tomatoes to pan. Fry for 5 minutes stirring well.

  7. Add this mixture to pot. Bring to boil, reduce, simmer for 2 hours.
